I sat at Ko Pi, one of the most famous breakfast spots on Phraram VI Road, and ordered a plate of roast pork with crispy skin, a steaming basket of siu mai dumplings, and a glass of Trang-style filtered coffee so thick and aromatic it could wake the dead. The pork was extraordinary — sweet, smoky, the fat rendered to a glassy crunch, the meat tender and deeply flavored. This is the Chinese-Thai heritage of Trang at its most delicious.

The islands off Trang's coast are where the landscape takes your breath away. I hired a longtail boat from Pak Meng pier and headed to Koh Muk, a small island with a handful of guesthouses and one of the most remarkable natural wonders I have ever seen: Tham Morakot, the Emerald Cave. To reach it, you swim through an 80-meter sea cave in near-total darkness — the water cold against your chest, the cave roof inches above your head, the sound of your own breathing amplified in the blackness — and then suddenly emerge into a hidden inland beach, a perfect crescent of white sand enclosed by towering limestone cliffs open to the sky. The water in the cave entrance glows an impossible emerald green where sunlight penetrates the rock. I sat on that secret beach for an hour, drying in the sun, utterly alone, feeling like I had discovered something out of a novel.

Back in town, the Trang night market on Sathani Road is a quieter affair than Bangkok's famous markets, but the food is arguably better. I worked my way through plates of khanom jeen with yellow curry, grilled squid on sticks, coconut pancakes called khanom krok, and a local specialty of deep-fried fish cakes so crisp and fragrant they disappeared in seconds. An older woman running a dessert stall handed me a piece of khanom piak poon — a translucent jelly noodle in sweet coconut milk — and when I told her it was delicious, she beamed and gave me a second bowl for free. Trang's night market is not a tourist attraction; it is simply where Trang eats dinner, and being welcomed into that nightly ritual felt like a privilege.

The coastline south of Trang stretches toward the Malaysian border through some of the least-developed beach territory in the Andaman region. I spent a day at Hat Chao Mai National Park, where long stretches of casuarina-lined beach meet clear water and the only other visitors were a family of sea eagles circling overhead. The Trang Islands — Koh Kradan, Koh Libong, Koh Ngai — are each distinct: Kradan has what many consider the most beautiful beach in Thailand (a bold claim, but standing on its eastern shore watching the sun set behind Koh Muk, I was inclined to agree), Libong is famous for its dugong population, and Ngai offers snorkeling straight off the beach in coral gardens teeming with parrotfish and clownfish. Trang gives you all of this without the crowds, without the full-moon-party infrastructure, without the sense that paradise has been optimized for Instagram. It is Thailand's Andaman coast the way it used to be, and for how much longer it will stay that way, I honestly cannot say.
