Nom Yen (นมเย็น) — literally 'cold milk' in Thai — is Thailand's beloved pink milk drink, a sweet, creamy, and distinctly Thai beverage that has been a childhood favourite and street food staple for generations. The signature pink colour and distinctive floral-sweet flavour come from Sala syrup: a bright red syrup made from the sala palm fruit (Salacca zalacca), also known as salak or snake fruit, which grows abundantly in Thailand and has a sweet, slightly astringent taste reminiscent of strawberry, pineapple, and honey combined. When Sala syrup is mixed with chilled fresh milk and poured over ice, the result is a pastel pink drink with a refreshing sweetness quite unlike anything available in Western countries. Nom Yen is an institution in Thai school canteens, morning markets, and casual restaurants — it is typically the drink ordered by Thai children who don't want the orange Thai tea or black coffee that adults favour, and has remained popular with adults who appreciate its comforting sweetness. The drink is prepared simply: Sala syrup is added to a glass, chilled milk is poured over ice, the syrup is stirred in (or layered for a prettier presentation), and the glass is handed over for 15–25 baht. Street versions often use UHT milk for convenience; premium versions use fresh whole milk for a creamier result. Sala syrup itself is also mixed with soda water (nom yen soda / daeng manao soda variation) for a lighter, fizzy pink drink equally popular in the summer heat.
