The main sanctuary, Prasat Hin Phimai, stands in the center of a rectangular compound oriented toward Angkor rather than east (a deliberate statement of allegiance), and its sandstone lintels depict scenes from the Ramayana with a delicacy that rivals anything at Angkor itself. Her version had a smoky, caramelized quality from the wok that was addictive. The night market around Ya Mo monument is excellent for cheap Isaan food - I particularly loved the moo yor (Korat-style pork sausage) which is finer-textured and more subtly spiced than other regional versions.

What makes Korat compelling is the combination of accessibility and authenticity. It is only 2.5 hours from Bangkok by expressway, yet it feels worlds away. The old city quarter, bounded by sections of the ancient laterite wall, has a thriving cafe and gallery scene that caters to local university students. On Yommarat Road I discovered a row of converted shophouses turned into independent coffee roasters and vintage bookshops that could rival anything in Chiang Mai. And yet step around the corner and you are in a traditional Isaan market where women weave silk on wooden looms and vendors sell freshwater fish paste from clay pots. Korat does not try to be anything other than what it is: a proud, prosperous Thai city that happens to sit at the crossroads of ancient Khmer civilization, wild jungle, and the vast Isaan heartland.

Pattaya is also home to the Floating Market, a colorful maze of boats selling everything from handmade crafts to delicious street food. I vividly remember the day I decided to explore it. As I navigated the narrow canals in a small boat, I was tempted by the mouthwatering aromas of pad thai and mango sticky rice. I ended up buying a bowl of tom yum soup from a lady who insisted I try her secret recipe, and it was the best I’ve ever had! The vibrancy of the market, filled with the sounds of haggling and laughter, truly encapsulates the essence of Thailand.
